Kerala parotta | Kerala Paratha | കേരള പറോട്ട ഇനി ആർക്കും എളുപ്പത്തിൽ വീട്ടിൽ തയ്യാറാക്കാം







                                                   Kerala parotta is a popular and favorite dish of Keralites. Kerala parotta is made with maida, but we can make healthier version by using wheat. It is best combination with chicken curry, egg curry and even with vegetable curry. Most of us think that making of kerala parotta is somewhat difficult. But I am sure, if you follow this step, you can definitely make soft layered parotta at home

Ingredients

All purpose flour - 1/2 cup
Wheat flour - 1/2 cup
Baking soda - 1/4 teaspoon
Salt - for taste
Milk - 1/2 cup
Water - as required
Oil-as required
Ghee - 4 teaspoon


Preparation

  • To a vessel, add half a cup of all purpose flour and half a cup of wheat flour. Else you can take one cup of maida or one cup of wheat flour alone
  • Add one tablespoon of sugar . Sugar gives light brown shades for parottas.
  • Add salt for taste and mix well
  • Add half a cup of cow's milk and mix well
  • Add half a teaspoon of baking soda and mix well
  • Add water little by little and knead well to make soft dough.Dough consistency is like chappathi dough.
  • While kneading, if you feel dough is too watery, you can add some more flour and knead well for 5 minutes.
  • Add one tablespoon of oil and knead again for 1 minute.
  • Close the vessel with a lid and keep it for 3 hours.
  • After 3 hours, the dough became soft. Divide dough into equal size balls.
  • Make small size balls just like chappathi, so that you can roll it over chappathi maker board.
  • Take 4 tablespoon of vegetable oil and mix 4 teaspoon of ghee. We using this mixture for making parattos.
  •  Take a ball, apply some flour and roll it like chappathi as thin as possible.No need to bother about shape. Make it as thin as possible
  • Then apply some oil on the top.Make sure to apply on all part else layers will not come properly.
  • With a knife, cut it small strips. If you cut into more smaller strips, you will get more layers. 
  • Bring all strips together and curl it into round and place the end under the ball. Apply some oil on the top. Place it over a plate.
  • Repeat the same process for rest of balls.
  • Keep it for one hour.
  • After one hour, take one roll and press gently with finger to flattened it.Place it over hot tawa and cook it over medium flame.
  • When brown spots starts coming, flip it and cook the other side .
  • Do the same for rest
  • After making four or five parottas, tap from both sides with hands to seperate the layers.
  • Keep the parottas warm until you make 4 or 5 parottas, else layers wont come properly.
  • Enjoy tasty parottas with chicken curry, egg curry etc
