Inji curry | Ginger Curry | Onasadhya recipe | ഇഞ്ചി കറി
Inji Curry is main dish in Kerala Sadhya.
It is very delicious and healthy side
dish. Ginger is highly nutritious and
also helps in digestion.
This version of Inji curry is Trivandrum
style.

Ingredients
Ginger chopped -500 gms
Green chilly -2 nos.
Oil - for frying
Tamarind - small gooseberry size
water - 1/4 cup
Salt - to taste
Jaggery - 2 tablespoon
Kashmiri chilly powder - 1 teaspoon
Asafoetida powder 1/4 teaspoon
Red chilly - 2 nos.
Curry leaves - 8 nos.
Preparation
- Soak gooseberry size of tamarind in hot water for 10 min
- Wash and clean ginger and chopped it into small evenly sized pieces
- Heat half a cup of oil in a pan
- Add ginger to hot oil
- Add 2 green chillies chopped
- Fry ginger until it turns brown colour
- When it turns brown colour, transfer to a plate immediately. Don’t allow to burn
- Allow it to cool completely, and grind it to coarse paste by adding little water
- To a hot pan, add 2 table spoon of oil and ¼ teaspoon of mustard seeds and allow to splutter
- Add curry leaves and red chillies
